This Casserole I found one time on an Old ElPaso package and I decided the ingredients sounded so good I had to try it! Prep time is 15 minutes and Bake time is 25 minutes and this dish make about 5 servings.
Ingredients:
- 1lb of lean ground beef/chuck
- 1/4 cup of chopped onions
- 2 tablespoons of Old ElPaso Taco Seasoning Mix from Package
- 1 (11oz) Can of Green Giant Mexicorn Whole Kernel with Red 7 Green Peppers Drained
- 2 (8oz) cans of Tomato Sauce
- 4 oz (1 cup) of Cheddar Cheese that have been cut into 1/2-inch cups
- 1 (7.5oz) Can of Pillsbury Refrigerated Buttermilk Biscuits
- 1 tablespoon of melted Butter/Margarine
Directions:
Preheat oven to 375°F.
In a 10-inch ovenproof skillet cook the ground beef and onions over medium-high heat, stirring frequently, until beef is thoroughly cooked, and then drain.
Reduce heat to medium, and stir in taco seasoning mix, corn and tomato sauce. Heat until hot, and then stir in cheese cubes.
Separate dough into 10 biscuits, and cut each into quarters.
Arrange quartered biscuits around outer edge of skillet. Then brush biscuits with melted butter.
Bake 18 to 22 minutes or until biscuits are golden brown.
